Caramel Chocolate Cake

As promised - here is a highlight from The Lady & Sons Just Desserts Cookbook.

This is the 1,2,3,4 cake (first recipe in the book) with the Caramel Filling (from another cake) and the Chocolate Frosting (from yet another cake). So, I combined 3 luscious desserts into one beautiful baby.

CARAMEL CHOC CAKE - DEEN

This is one of the easiest and tastiest cakes I've ever made. Honestly, I've never had a cake bake so evenly (and level) before either! I didn't have to level them off before I stacked them - super! The cake was very moist and had the perfect crumb. Delish!

Now, as you can imagine...sometimes these goodies look so good it is hard for me to contain myself long enough to take good pictures to show you all. Well, evidently it is much harder on my 4-year-old daughter than me. *giggle*giggle*

Look at that expression! I couldn't help but turn the focus onto her when I seen her eyeing the cake from across the table.

She kept asking me for a taste, over and over and over again. All I kept saying was, "Hold on, Love. We'll get to eat it in a minute." Poor thing. What torture, yeah?

Waiting. Staring. Drooling.

Four years old and she already knows pain.

*LOL*

Just so you all know, I'm not totally brutal. The child did get a piece of cake after I took pictures. All is well in her world again.

Sunday Spotlight: Omnomicon

I come to you today extremely excited....nope, just flat out beside myself with enthusiasm. Really. People who know me would tell you that I am a very colorful person. I love everything colorful. Everything. Green especially. Lime green, if we're getting technical....anyway....I can be seen almost anywhere carrying my obnoxiously large, bright, lime-green Laffy Taffy bag (it is so adorable and I got it for a STEAL). I rarely have ever been described as "normal"...and that is quite alright by me. *smile*

Ok, so moving on.....I was browsing the internet, looking for a blog to highlight today, when I found this site called Tastespotting. I was awe-stricken. A place that I can just look at all kinds of glorious food! Well, I came across this beautiful piece of cake, Daffodil Cake. I thought to myself, "I'd love to try that cake!" Then I proceeded to peruse the blog that it came from. I love this girl! She is hilarious, I cannot tell you the number of times that I actually laughed out loud and said, "Me too!".

Now, I have decided that I'm definitely doing the Sunday Spotlight on her....but to find a few other things that I'd like to try. Well, that did not take long, let me tell you! She had the most beautiful cake I have ever seen on there...and I stopped dead in my tracks (Ok, well I was sitting....but you know what I mean!). I walked through the recipe and knew I had every ingredient on-hand. That was it!

My daughter, Syndel, walked in right as I was printing the recipe out and said, "Oh, Mommy! Can I help you make that pretty cake?" How was I going to turn down a girl who obviously loves color (and baking) as much as me? Well, I couldn't.

So, Syndel and I got to mixing:

Now, I know, I know....we didn't have the "real" rainbow colors, so we just made do with what we did have.....6 gorgeous colors....just not all found in the "traditional" rainbow. And that is OK by both of us....I checked.

So, we didn't really care about the layering effect, we just wanted something pretty....so we just did spoonfuls of the different colors into the bundt pan:

Syndel sat at the oven door for most of the time it was baking. She kept turning the light on to check on it and such. So cute....and reminds me a lot of when I was young. I've always had a passion for everything in the kitchen....baking, cooking....anything.

When it came out, we both "oooohed and aaaahed" over it. Phenominal! I tell you....really. Look closely......beautiful, yeah?

So, naturally, we were even more excited to cut into that baby! Syndel and I hovered over the cake, we could already picture the beauty that we were about to witness in our little minds......

Syndel squealed with delight....I held mine back just slightly and gasped. *giggle*giggle* Really, I have never seen such a beautiful cake! Have you? Really now, let's be honest!

I was so moved by it, I almost didn't want to eat it.....almost. But now I needed to know if it tasted as wonderful as it looked.

Red Velvet Cake.....almost

Continuing on my Spotlight Sunday of Brownies for Dinner, I wanted to try Patricia's Red Velvet Cake recipe. I've never made a red velvet cake before, so I was excited!

The recipe is SUPER easy to follow and comes together quickly. YEAH!

I decided not to do cupcakes, though, so I poured that lovely batter into my trusty-dusty (ok, so it isn't really 'dusty' - but you know what I mean) bundt pan.

A beautiful cake is in my near future, yes?

Well, no actually, it wasn't!

Did you notice in the picture above when I was rounding up my ingredients what kind of flour I grabbed? Here, look again:

Yup, that is right....I grabbed the WRONG FLOUR out of my pantry! I've never had that happen before...even with FOUR different kinds of flour in there! *blushing* Ok - so needless to say, I was disappointed.

Here is my not-so-successful turn-out:

The consistency was horrible, very greasy and it collapsed while baking...then even more so during cooling. I've never had anything stick to my silicone bundt pan before, but this did!

So, I'll be trying this recipe again.....making sure to double check (and probably triple check) which flour I'm using BEFORE beginning! *smile*

Let this be a lesson to everyone....we ALWAYS double check the flour BEFORE mixing a recipe! *tee hee*

February Challenge - Daring Bakers!

Alright - so I am excited to present my very first Daring Bakers' Challenge!

A Chocolate Valentino! When that was posted - I was thrilled!!! I love cake, I love chocolate, and I love to try new things! All of which fit the bill here. :)

The February 2009 challenge is hosted by Wendy of WMPE's blog and Dharm of Dad ~ Baker & Chef. We have chosen a Chocolate Valentino cake by Chef Wan; a Vanilla Ice Cream recipe from Dharm and a Vanilla Ice Cream recipe from Wendy as the challenge.

February’s challenge is a Flourless Chocolate Cake, Chocolate Valentino, inspired by Malaysia’s “most flamboyant food ambassador”, Chef Wan. Recipe comes from Sweet Treats by Chef Wan.


OK - so my first attempt, I wanted to be bold and try a White Chocolate Valentino. Well....here it is:

This is what it looked like after I tried to get it out of the pan. :( I was sad! So, I posted to my fellow DB'ers for help. Turns out....if you use White Chocolate, you need to cut the butter in half! I didn't know that, obviously. LOL

Alright, so back to the drawing board. :) I decided I was just going to go with a semi-sweet chocolate this time.

Unfortunately, I didn't get a chance to try to make the ice cream. :( I've been REALLY busy with school and such lately.

Anyhoo - I'm really excited about my first DB Challenge and look forward to future challenges! :)

Here is the recipe used (and below you will find recipes for ice cream!):

Chocolate Valentino
Preparation Time: 20 minutes

16 ounces (1 pound) (454 grams) of semisweet chocolate, roughly chopped
½ cup (1 stick) plus 2 tablespoons (146 grams total) of unsalted butter
5 large eggs separated

1. Put chocolate and butter in a heatproof bowl and set over a pan of simmering water (the bottom of the bowl should not touch the water) and melt, stirring often.

2. While your chocolate butter mixture is cooling. Butter your pan and line with a parchment circle then butter the parchment.

3. Separate the egg yolks from the egg whites and put into two medium/large bowls.

4. Whip the egg whites in a medium/large grease free bowl until stiff peaks are formed (do not over-whip or the cake will be dry).

5. With the same beater beat the egg yolks together.

6. Add the egg yolks to the cooled chocolate.

7. Fold in 1/3 of the egg whites into the chocolate mixture and follow with remaining 2/3rds. Fold until no white remains without deflating the batter.

8. Pour batter into prepared pan, the batter should fill the pan 3/4 of the way full, and bake at 375F/190C

9. Bake for 25 minutes until an instant read thermometer reads 140F/60C. Note – If you do not have an instant read thermometer, the top of the cake will look similar to a brownie and a cake tester will appear wet.

10. Cool cake on a rack for 10 minutes then unmold.

Dharm's Ice Cream Recipe
Classic Vanilla Ice Cream
Preparation Time: 30 minutes

Recipe comes from the Ice Cream Book by Joanna Farrow and Sara Lewis (tested modifications and notes in parentheses by Dharm)

Ingredients
1 Vanilla Pod (or substitute with vanilla extract)
300ml / ½ pint / 1 ¼ cups Semi Skimmed Milk – in the U.S. this is 2% fat
4 large egg yolks
75g / 3oz / 6 tbsp caster sugar {superfine sugar can be achieved in a food processor or use regular granulated sugar}
5ml / 1 tsp corn flour {cornstarch}
300ml / ½ pint / 1 ¼ cups Double Cream (48% butter fat) {in the U.S. heavy cream is 37% fat)

(you can easily increase your cream's fat content by heating 1/4 cup of heavy cream with 3 Tbs of butter until melted - cool to room temperature and add to the heavy cream as soon as whisk marks appear in the cream, in a slow steady stream, with the mixer on low speed. Raise speed and continue whipping the cream or use heavy cream the difference will be in the creaminess of the ice cream.)

1. Using a small knife slit the vanilla pod lengthways. Pour the milk into a heavy based saucepan, add the vanilla pod and bring to the boil. Remove from heat and leave for 15 minutes to allow the flavours to infuseLift the vanilla pod up. Holding it over the pan, scrape the black seeds out of the pod with a small knife so that they fall back into the milk. SET the vanilla pod aside and bring the milk back to the boil.

2. Whisk the egg yolks, sugar and corn-flour in a bowl until the mixture is thick and foamy.

3. Gradually pour in the hot milk, whisking constantly. Return the mixture to the pan and cook over a gentle hear, stirring all the time

4. When the custard thickens and is smooth, pour it back into the bowl. Cool it then chill.

5. By Hand: Whip the cream until it has thickened but still falls from a spoon. Fold it into the custard and pour into a plastic tub or similar freeze-proof container. Freeze for 6 hours or until firm enough to scoop, beating it twice (during the freezing process – to get smoother ice cream or else the ice cream will be icy and coarse)By Using and Ice Cream Maker: Stir the cream into the custard and churn the mixture until thick (follow instructions on your ice cream maker)


Wendy's Ice Cream Recipe
Vanilla Philadelphia Style Recipe
Preparation Time: 5 minutes

2 cups (473 ml) of half and half (1 cup of heavy cream and 1 cup of whole, full fat milk)
1 cup (237 ml) heavy cream
2/3 (128 grams) cup sugar
Dash of salt
1 (12 grams) tablespoon of vanilla

Mix all ingredients together (we do this in a plastic pitcher and mix with an emulsifier hand blender-whisking works too).
Refrigerate for 30 minutes or longer
Mix in your ice cream maker as directed.
